Green Curry Chicken over Konjac Rice

- 140 g Konjac rice
- 180 g Chicken thighs
- 100 ml Coconut milk
- 15 g Green curry paste
- 12 g Thai basil
- 2 tsp Fish sauce
- 25 g Green beans (optional)
- 1 Kaffir lime leaves (optional)
Method
- Cut the chicken thighs into large pieces, top and tail the green beans, tear the lime leaf and pick the basil leaves.
- Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
- Spoon the thick cream from the top of the coconut milk into a hot pan and fry the green curry paste in it for 3 minutes, until the cream splits and green oil rises to the surface. This is the step that makes the curry.
- Add the chicken and turn it through the split paste for 2 minutes, then pour in the rest of the coconut milk with the lime leaf and bring it to a bare simmer — never a boil, or it will separate.
- Simmer gently for 8 minutes until the chicken is cooked through, adding the green beans for the last 3 minutes.
- Off the heat, stir in the fish sauce and the basil leaves so they wilt in the residual heat.
- Spread the konjac rice in a bowl and ladle the green curry over it, making sure the split green oil goes on too.
