  • 4 cloves Garlic
  • 2 tbsp Neutral oil
  • 0.4 tsp Salt
  • 1 tbsp Shaoxing wine (optional)
  • ½ tsp Sugar (optional)

Method

  1. Trim the gai lan and blanch in boiling water for 1 minute, then drain.
  2. Slice the garlic.
  3. Fry the garlic in the oil until pale gold, add the gai lan, splash in the wine, and toss over high heat with the sugar and salt until glossy, 3 minutes.
  4. Serve at once.
