- 170 g Konjac rice
- 200 g Chicken thighs
- 2 tbsp Peanut oil
- 2 tsp Fish sauce
- 2 Thai chilies
- 10 g Peanuts (optional)
- 40 g Cucumber (optional)
- 10 g Mint (optional)
- 10 g Cilantro (optional)
Method
- Cut the chicken thighs into large pieces and rub them with half the fish sauce and one chopped chilli. Slice the cucumber, crush the peanuts, and pick the mint and coriander leaves.
- Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
- Get a heavy pan very hot with the peanut oil and lay the chicken in skin-side down. Leave it 6 minutes without moving so the edges blacken, then turn and cook 4 minutes more until cooked through.
- Off the heat, spoon the remaining fish sauce over the chicken and swirl it through the hot oil in the pan.
- Spread the konjac rice on a plate and pile the charred chicken over it with all the chilli oil from the pan. Scatter the cucumber, the remaining sliced chilli, the herbs and the crushed peanuts.
