Ingredients

  • 800 g Beef short rib
  • 300 g Korean radish
  • 1 Onion
  • 5 cloves Garlic
  • 3 Scallions
  • 0.6 tsp Salt
  • ½ tsp Black pepper (optional)

Method

  1. Soak the short ribs in cold water 20 minutes to draw out blood, then blanch in boiling water 5 minutes and rinse.
  2. Simmer the cleaned ribs with the onion, garlic, and plenty of water until the meat is tender, about 50 minutes, skimming.
  3. Add chunks of radish and cook until translucent, 12 minutes; season with salt and pepper.
  4. Ladle into bowls and finish with sliced scallions.
