Shrimp Scampi with Zucchini Noodles

Ingredients
- 600 g Shrimp
- 4 Zucchini
- 4 cloves Garlic
- 1 Lemon
- 3 tbsp Extra-virgin olive oil
- ⅜ tsp Salt
- ½ tsp Red pepper flakes (optional)
- 3 tbsp Parsley (optional)
- 20 g Parmigiano-Reggiano (optional)
Method
- Spiralize or peel the zucchini into long ribbons and set aside.
- Warm the oil with the sliced garlic and pepper flakes until fragrant but not browned.
- Add the shrimp and salt and cook, tossing, until pink and just firm, 3 minutes.
- Add the zucchini and toss just until barely tender, 2 minutes — don't let it go soggy.
- Squeeze in the lemon, fold through parsley, and finish with parmesan.
