Ingredients

  • 240 g Pork shoulder
  • 200 g Potatoes
  • 10 g Doenjang
  • 7 g Gochugaru
  • 3 cloves Garlic
  • 70 g Napa cabbage (optional)
  • 10 g Ginger (optional)
  • 30 g Scallions (optional)
  • 4 Perilla leaves (optional)
  • 12 g Sesame seeds (optional)
  • 10 ml Toasted sesame oil (optional)
  • 5 ml Soy sauce (optional)
  • ¼ tsp Black pepper (optional)

Method

  1. Cut the pork shoulder into fist-sized pieces and grind the pepper over them.
  2. Boil the pork hard in plenty of water until a grey scum rises and holds, then drain the pot and rinse every piece under the tap.
  3. While the pork throws its scum, mash the doenjang, chilli flakes, garlic and ginger together into a rough dark paste.
  4. Put the rinsed pork back with enough fresh water to cover it by a hand's width, stir the paste through and bring it to a simmer.
  5. Keep it covered and barely moving until the pork gives way when you press it with a spoon.
  6. While the pork softens, halve the potatoes, cut the cabbage into wide ribbons, shred the perilla and spring onion, and crush the sesame seeds to a coarse powder.
  7. Slide the potato and cabbage down the side of the pot and cook on, still covered, until a skewer passes through the potato without catching.
  8. Off the heat, stir the soy sauce, the sesame oil and most of the crushed sesame through the broth.
  9. Ladle it into a bowl and heap the perilla, spring onion and the last of the sesame on top.
