About Garbanzos con Chorizo
Garbanzos con chorizo is a rustic Spanish chickpea stew, the kind of honest, economical cooking found in home kitchens and neighborhood bars across the country. It pairs tender chickpeas with cooking chorizo, whose paprika-spiked fat is the engine of the whole dish, and binds them in a thick, smoky tomato base. This is comfort food in the peasant tradition, filling and inexpensive, where a small amount of good sausage flavors a whole pot.
The taste is deep and warming: smoky and savory from the rendered chorizo and a spoonful of sweet pimentón, with sweet softened onion and a tomato base cooked down until it clings to the beans. The technique that carries the flavor is rendering the chorizo first so its orange fat coats the pan, then softening the aromatics in that seasoned fat before the tomato reduces, which layers the dish rather than boiling everything together. Ready in about half an hour and satisfyingly high in protein and fiber, it is served with crusty bread for dipping and works equally as a hearty tapa, a starter, or a full plato with a glass of red.
