About Chickpeas with Spinach
Garbanzos con espinacas is a chickpea-and-spinach stew from Andalusia, most famously associated with Seville, where it is a traditional Lent and Holy Week dish and a staple tapa in the city's bars. It is entirely plant-based yet deeply savory, its character built not on meat but on spice: sweet smoked pimentón and earthy cumin bloomed in olive oil, brightened at the end with a splash of sherry vinegar. Spinach and chickpeas make it hearty and nourishing while keeping it light.
On the palate it is smoky, earthy and gently tangy, the cumin and paprika giving warmth, the vinegar cutting through with a sharp Andalusian edge, and golden fried garlic threading flavor throughout. The small but crucial technique here is taking the pan off the heat to stir in the paprika and cumin so they bloom in the residual warmth without scorching, since burnt paprika turns bitter and ruins the pot. It comes together in around twenty minutes, and true to its tapas roots it is served warm with bread to scoop it up, making a satisfying vegan main or a shareable small plate that carries anti-inflammatory, high-fiber credentials without feeling like health food.
