Prawns, Feta and Olives over Konjac Rice

- 200 g Konjac rice
- 170 g Shrimp
- 50 g Feta
- 2½ tbsp Olive oil
- 1 tsp Dried oregano
- ½ Lemon
- 20 g Kalamata olives (optional)
- 25 g Tomato (optional)
- 8 g Dill (optional)
Method
- Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
- While the konjac dries out: peel the prawns, chop the tomato, stone the olives, and chop the dill.
- Warm the olive oil in a pan over medium with the oregano for 30 seconds, then add the tomato and cook 2 minutes, pressing it down until it breaks apart and stains the oil red.
- Add the prawns and cook 2 minutes, turning once, until pink and just firm. Take the pan off the heat and squeeze in the lemon.
- Spread the hot konjac rice in a shallow bowl and spoon the prawns and all their oily tomato juices over it. Crumble the feta on top so it softens in the heat, scatter the olives and dill.
