Prawn and Courgette Pita with Dill Yoghurt

- 220 g Shrimp
- 1 Pita
- 90 g Zucchini
- 40 g Greek yogurt
- 8 g Dill
- 1 tsp Olive oil
- ½ Lemon (optional)
Method
- Peel the prawns and draw the dark thread out of each back, then run a peeler the length of the courgette to take it down into long flat ribbons.
- Stir most of the chopped dill into the Greek yoghurt with the juice of the half lemon, and keep a pinch of the herb back for the end.
- Put the olive oil into a wide pan over a strong flame and lay the courgette ribbons in flat for four minutes, until they slump and take a little colour at the edges, then rake them over to one side.
- Drop the prawns into the cleared half of the pan and give them three minutes, turning once — they are done the moment they curl tight and the last of the glassiness goes out of them.
- While the pan is busy, sit the pita on a low dry pan with a lid over it for three minutes; a warm one folds, a cold one cracks along the crease.
- Streak the dill yoghurt down the inside of the warm pita, lay the courgette ribbons flat against one wall, tip the prawns in over them and scatter the reserved dill on top.
- Serve at once, while the prawns are still hot enough to loosen the yoghurt into the ribbons.
