About Honey-Garlic Roasted Carrots

Honey-garlic roasted carrots are a sweet-savory side that leans on the natural sugars in the carrot and pushes them further with heat and a glaze. Cut into thick sticks and roasted at a high 220°C, the carrots caramelize at the edges and soften inside, while a dusting of smoked paprika adds a low, woody warmth that keeps the honey from reading as merely sweet. The result sits somewhere between a vegetable and a treat: tender, glossy, faintly smoky, with garlic threading through every bite.

The technique that sets this version apart is holding the glaze back. Rather than roasting the honey and butter with the carrots, where the sugars would scorch, they're gently melted with garlic in a separate pan over low heat and poured over only after the carrots come out of the oven. That keeps the glaze bright and the garlic sweet instead of bitter. It's a natural fit for a holiday spread or a weeknight roast dinner, holds up next to chicken or pork, and its high-fiber, vegetarian profile makes it an easy vegetable to actually look forward to.
