About Garlic Butter Mushrooms
Garlic butter mushrooms are a side that routinely outshines the main it's meant to accompany. The dish hinges on one discipline most home cooks skip: patting the mushrooms bone-dry and searing them cut-side down, undisturbed, in a wide, hot pan. That patience drives off moisture and builds a deep brown crust instead of the pale, steamed, rubbery texture that crowded or wet mushrooms produce. The reward is a meaty, savory bite with real caramelization.
Only once the color is set do the second knob of butter, minced garlic, and thyme go in, tossed just long enough to turn fragrant so nothing scorches. A small squeeze of lemon at the end brightens the richness and keeps the whole thing from feeling one-note. Low in carbs and calories, it's the classic companion to a seared steak but works just as well over toast, folded into eggs, or piled beside roasted chicken. Serve them hot, glossy with the pan butter, while the crust is still crisp.
