About Domatokeftedes
Domatokeftedes are Santorini's famous tomato fritters, a rustic meze from the Cycladic islands where the small, intensely sweet local tomatoes are grated into a herby batter and fried until crisp. Grated tomato and onion are drained, then bound with flour, mint, and oregano into a thick batter that's dropped by the spoonful into hot oil. Despite the shared root in the Greek word for tomato, these are a world away from stuffed gemista — here the tomato is the whole flavor, not the container.
Each fritter comes out golden and crackling on the outside, soft and almost jammy within, carrying the sweetness of the tomato against the lift of fresh mint and dried oregano. Draining the grated vegetables well is the small step that matters most, since it keeps the batter thick enough to hold together and fry crisp rather than spread and steam. They're best eaten hot from the pan as an appetizer or part of a spread of small plates, with a bowl of tzatziki alongside to cool and sharpen each bite. Cheap, quick, and vegan, they're the kind of thing that disappears before it reaches the table.
