- 1500 g Lamb
- 6 cloves Garlic
- 2 tbsp Rosemary
- 3 tbsp Olive oil
- ¾ tsp Salt
- 1 tbsp Thyme (optional)
- 1 Lemon (optional)
Method
- Slit the lamb all over and push in slivers of garlic; rub with olive oil, rosemary, thyme, and salt.
- Roast at 200°C for 20 minutes, then drop to 170°C and roast to your liking, about 55 minutes for pink.
- Rest the lamb, loosely covered, for 15 minutes.
- Carve and finish with a squeeze of lemon.
