  • 1500 g Lamb
  • 6 cloves Garlic
  • 2 tbsp Rosemary
  • 3 tbsp Olive oil
  • ¾ tsp Salt
  • 1 tbsp Thyme (optional)
  • 1 Lemon (optional)

Method

  1. Slit the lamb all over and push in slivers of garlic; rub with olive oil, rosemary, thyme, and salt.
  2. Roast at 200°C for 20 minutes, then drop to 170°C and roast to your liking, about 55 minutes for pink.
  3. Rest the lamb, loosely covered, for 15 minutes.
  4. Carve and finish with a squeeze of lemon.
