- 150 g White rice
- 300 g Chicken breast
- 25 g Ginger
- 3 Scallions
- 1 tsp Toasted sesame oil
- ½ tsp Salt
- ¼ tsp White pepper (optional)
Method
- Rinse the rice, then simmer with plenty of water and half the sliced ginger, stirring occasionally, until broken down and creamy, 40 minutes.
- Slice the chicken thinly and the scallions.
- Stir the chicken into the hot congee with the salt and poach until just cooked, 4 minutes.
- Finish with the scallions, white pepper, and a few drops of sesame oil.
