About Greek Chicken Salad

This Greek chicken salad is a lean, protein-forward take on the horiatiki, the classic village salad of tomatoes, cucumber, olives, and feta that anchors summer tables across Greece. The difference here is the addition of a seared, sliced chicken breast, which turns a side dish into a full plate substantial enough for lunch or a light dinner. Everything leans on the Mediterranean flavor spine: brine from kalamata olives, the salty tang of crumbled feta, sweet ripe tomato, and cooling cucumber, all pulled together by a simple dressing of lemon juice and extra-virgin olive oil. Dried oregano does double duty, seasoning the chicken as it cooks and lending the whole bowl its unmistakably Greek herbal edge.

The eating experience is bright and clean rather than heavy: the vegetables stay crunchy and raw, the chicken adds warm savory chew, and the feta melts a little where it meets the just-cooked meat. Shaving the red onion thin keeps its bite present but not overpowering, and the lemon dressing wakes everything up without any cream or mayonnaise weighing it down. It comes together in about twenty minutes and is naturally low in carbohydrate, which makes it a smart choice when you want a filling meal that stays light. Serve it on its own, or alongside warm pita and a spoonful of tzatziki if you're feeding a bigger appetite.
