Ingredients
- 600 g Chicken thighs
- 250 g Yogurt
- 1 Lemon
- 5 cloves Garlic
- 2 tsp Dried oregano
- 2 tbsp Extra-virgin olive oil
- 1 tsp Salt
- ½ tsp Black pepper
- ½ tsp Red pepper flakes (optional)
- 2 tbsp Parsley (optional)
Method
- Mince the garlic. Zest and juice the lemon.
- Whisk together the yogurt, garlic, lemon zest and juice, oregano, salt, pepper, and chili flakes if using.
- Pat the chicken dry, slash each thigh once or twice through the skin, and turn through the marinade to coat. Let sit at room temperature for 20 minutes (or up to 12 hours in the fridge).
- Heat the olive oil in a wide pan over medium-high. Lift the chicken from the marinade, letting the excess drip off, and sear skin-side down until deeply golden, 7 minutes.
- Flip and cook until the chicken is cooked through, about 6 minutes more.
- Rest the chicken on a plate for 3 minutes. Scatter parsley and serve.
