- 90 g Graviera
- 1 Low-carb tortillas
- 1 Red bell pepper
- 1 tbsp Olive oil
- 60 g Tomato (optional)
- ½ tsp Dried oregano (optional)
- ½ Lemon (optional)
Method
- Cut the red pepper into wide flat panels, slice the tomato into thin rounds, and cut the graviera into slices no thicker than a coin so it melts before the outside of the wrap catches.
- Put half the olive oil in a heavy pan over a high flame and lay the pepper panels skin-down, keeping them pressed against the metal and shunting them around the hot spots for seven minutes, until the skin blackens in patches and the flesh gives under the spoon. Crush the dried oregano over them off the heat.
- While the peppers blister, sit the low-carb tortilla in a second dry pan over the lowest flame for two minutes; it has to be warm right through before it will take a fold without cracking.
- Lay the graviera down the middle of the warm tortilla, the blistered peppers over it and the tomato rounds on top, then fold the two sides in and bring the bottom edge up into a flat parcel.
- Clear the pan of pepper skins, trickle in what olive oil is left and settle the parcel onto its seam under a weighted plate. Five minutes, one turn, and it is done when both faces are freckled brown and the graviera has run down into the peppers.
- Give it a moment on the board to stop running, then cut it across and squeeze the lemon over the open faces — graviera without lemon is just salt.
