Greek Lemon Chicken Rice
Chicken thighs braised in a lemony oregano sauce, finished with butter and herbs, served over fluffy rice.
Ingredients
- 350 g Chicken thighs
- 150 g White rice
- 1 tbsp Olive oil
- 2 cloves Garlic
- 1 tsp Dried oregano
- 120 ml Chicken stock
- ½ Lemon
- 1 tbsp Butter
- ½ tsp Salt
- ½ Onion (optional)
- ½ tsp Smoked paprika (optional)
- 1 tsp Dijon mustard (optional)
- 2 tbsp Dill (optional)
- ¼ tsp Black pepper (optional)
Method
- Rinse the rice, then cook it in twice its volume of water, covered, until tender and the water is absorbed, about 15 minutes.
- Heat the olive oil in a pan over medium-high heat.
- Add the chicken cubes, season with the salt and black pepper, and cook for 4-5 minutes until browned.
- While the chicken browns, mince the garlic and finely dice the onion.
- Roughly chop the dill. (optional)
- Add the onion and garlic to the chicken and cook for 1 minute, until fragrant.
- Stir in the oregano and smoked paprika and cook for 30 seconds.
- Pour in the chicken stock and simmer for 3-4 minutes, until the chicken is cooked through and the liquid reduces slightly.
- Stir in the Dijon mustard and the juice of the lemon half.
- Turn off the heat and swirl in the butter until the sauce turns glossy.
- Scatter with the dill and spoon the chicken and its glossy sauce over the rice.
