Greek Salad
Tomatoes, cucumber, olives, and a slab of feta under oregano and good oil. No lettuce, no apology.

Ingredients
- 3 Tomato
- 1 Cucumber
- ½ Red onion
- 150 g Feta
- 4 tbsp Extra-virgin olive oil
- 1 tbsp Red wine vinegar
- 1 tsp Dried oregano
- ½ tsp Salt
- 80 g Kalamata olives (optional)
Method
- Cut the tomatoes into chunky, bite-size wedges.
- Slice the cucumber into thick half-moons.
- Slice the red onion into thin slivers.
- Toss the vegetables in a wide bowl with the olives, vinegar, salt, and most of the olive oil.
- Lay the feta on top of the salad in one whole slab.
- Dust the feta with the oregano, pour the last of the oil over the cheese, and serve.
