  • 500 g Frozen peas
  • 1 Onion
  • 800 ml Stock
  • 20 g Butter
  • 1 tsp Salt
  • 2 tbsp Mint (optional)
  • ½ Lemon (optional)

Method

  1. Dice the onion finely so it softens fast.
  2. Melt the butter in a soup pot over medium heat and soften the onion until translucent, about 5 minutes.
  3. Add the stock and salt to the pot and bring to a rolling boil over high heat.
  4. Add the frozen peas and boil for just 3 minutes — no longer, to keep them bright green.
  5. Blend the soup with the mint until completely smooth and velvety.
  6. Brighten each bowl with a squeeze of lemon and serve hot or chilled.
