About Grilled Cheese
Grilled cheese is the quintessential American comfort sandwich: sliced bread, butter, and melting cheese, cooked in a pan until the outside is crisp and golden and the inside runs molten. Here the filling is sharp cheddar, grated rather than sliced so it melts faster and more evenly, and the bread is buttered on the outside so it fries to a deep, even brown. The pleasure is textural as much as anything, the shatter of the crust against the soft, stretchy cheese within.
The keys to a good one are heat and patience. Grating the cheese ensures it fully melts in the same time the bread takes to color, and cooking each side undisturbed over medium heat rather than rushing it gives you that uniform golden crust instead of scorched spots. It is a ten-minute solo meal, endlessly satisfying on its own or paired with tomato soup for the classic combination. Simple as it is, getting the melt and the crust to finish at the same moment is the whole craft of it.
