- 300 g Beef shin
- 60 g Onion
- 150 g Potatoes
- 2 tsp Smoked paprika
- 16 g Lard
- 150 ml Beef stock
- 0.1 tsp Salt
- ¼ Green bell pepper (optional)
- 50 g Carrot (optional)
- 50 g Tomato (optional)
- 1 Bay leaves (optional)
- ¼ tsp Black pepper (optional)
Method
- Cut the beef shin into big cubes, leaving the seam of gristle in place, and season them with the salt and pepper.
- Dice the onion small, cut the pepper into short strips, slice the carrot into thick coins and grate the tomato on the coarse holes, throwing the skin away.
- Melt the lard in a heavy pot and sweat the onion over a low flame until it slumps and turns glassy.
- Pull the pot right off the heat and stir the paprika into the onion until the fat runs red, then set it back on a low flame and turn the beef through it.
- Pour in the stock, add the grated tomato and the bay leaf, and bring it up to the point where one bubble breaks at a time.
- Cover and hold it at that bare tremble until a cube of shin gives way completely under the back of a fork.
- While the beef cooks, peel the potatoes and break them into rough chunks with the knife rather than slicing them cleanly.
- Drop in the potato and the carrot coins and cook on, lid ajar, until a knife slides into a potato and out again without lifting it.
- Fish out the bay leaf and ladle the gulyas into a deep bowl, broth and all.
