Ingredients

  • 350 g Beef short rib
  • 300 g Japanese short-grain rice
  • 1 Onion
  • 5 g Kombu (dried kelp)
  • 8 g Katsuobushi (bonito flakes)
  • 3 tbsp Japanese soy sauce (koikuchi shoyu)
  • 3 tbsp Mirin
  • 2 tbsp Sake
  • 1½ tbsp Sugar
  • 15 g Ginger
  • 2 Scallions (optional)
  • 2 Egg (optional)

Method

  1. Soak the kombu in a pot of cold water to make the base for the dashi (a kombu-and-bonito stock).
  2. Bring the kombu water over medium-low just to the first bubbles, then lift the kombu out. Take the pot off the heat, scatter in the bonito flakes, and let them steep briefly before straining the dashi into a clean pan.
  3. Rinse the rice in cold water until it runs nearly clear. Drain.
  4. Combine the rice with an equal volume of fresh water in a heavy saucepan. Cover and bring to a boil.
  5. Drop the heat to its lowest setting and cook, lid on. Don't lift the lid.
  6. Pull the pot off the heat and rest, lid on.
  7. Slice the onion thin lengthwise. Grate the ginger. Slice the beef as thin as you can manage (freezing it briefly first gives cleaner slices).
  8. Combine the dashi, soy, mirin, sake, sugar, and ginger in a wide pan and bring to a simmer. Add the onion and cook until limp.
  9. Slide the beef in and separate the slices with chopsticks. Simmer until just cooked through, skimming any foam.
  10. Spoon the rice into bowls. Ladle the beef-onion topping with plenty of sauce over the rice. Crack a soft egg on top if using and scatter scallions.
