Ingredients

  • 180 g Ground lamb
  • 1 Low-carb tortillas
  • 1 Green chili
  • 10 g Cilantro
  • 1 tsp Neutral oil
  • 8 g Ginger
  • ½ tsp Garam masala
  • ¼ tsp Salt
  • 8 g Mint (optional)
  • 60 g Spinach (optional)

Method

  1. Chop the coriander, mint, green chilli and ginger together on one board until they are fine enough to disappear into mince.
  2. Shred the spinach and keep it by the stove.
  3. Heat the oil in a shallow pan and drop the lamb mince in as lumps, leaving them undisturbed for three minutes so they brown rather than steam. Break them up and keep the pan moving for four minutes more, until the fat has run out and the edges have gone crisp.
  4. Stir the salt, garam masala and the green paste into the mince and give them two minutes, then shove the meat to one side and let the spinach wilt in the rendered fat for three before folding everything back together.
  5. The keema asks nothing of you for a minute or two. Use it: low-carb tortilla into a dry pan on a low flame, ninety seconds a side. Cold, it splits along the fold; warm, it takes the roll.
  6. Pile the keema down the centre of the tortilla, tuck both ends in and roll it away from you into a fat cigar.
  7. Halve it and eat it in the hand with the cut sides facing up, so nothing works its way out of the bottom.
