Ingredients

  • 30 g Sweet potato noodles (dangmyeon)
  • 200 g Chicken breast
  • Cucumber
  • 1 tbsp Rice vinegar
  • 1 tsp Japanese light soy sauce (usukuchi)
  • 1 tsp Toasted sesame oil
  • 4 g Dried wakame (optional)
  • ½ Carrot (optional)
  • 6 g Ginger (optional)
  • 1 tsp Sesame seeds (optional)

Method

  1. Bring a small pan of water to a simmer, slide the chicken breast in whole and hold it at a bare tremble under a lid until the thickest part is firm and the juices run clear, then leave it to cool in its own liquid.
  2. Cover the wakame with cold water and leave it to open out into dark green fronds.
  3. Peel the cucumber into ribbons and the carrot into matchsticks, then grate the ginger onto the board.
  4. Stir the rice vinegar, usukuchi soy, sesame oil and the grated ginger together until the dressing turns cloudy and clings to the spoon.
  5. Boil the glass noodles until they turn from white to clear, then drain and hold them under a cold tap until they are cold and slippery rather than sticky.
  6. Snip the drained noodles into forkable lengths, tear the cold chicken along the grain into strands, and squeeze the wakame dry.
  7. Turn the noodles, chicken, wakame, cucumber and carrot through the dressing until nothing is dry, and top with the sesame seeds.
