- 700 g Chicken thighs
- 3 Carrot
- 400 g Potatoes
- 1 Lemon
- 5 cloves Garlic
- 1 tbsp Thyme
- 3 tbsp Extra-virgin olive oil
- ½ tsp Salt
- ½ tsp Black pepper (optional)
Method
- Heat the oven to 210C (410F). Cut the potatoes and carrots into chunks.
- Toss the vegetables and chicken with the oil, smashed garlic, thyme, salt, pepper, and lemon zest on a tray.
- Roast until the chicken is golden and the vegetables tender, 35 minutes, turning once.
- Squeeze the roasted lemon over and serve from the tray.
