  • 700 g Chicken thighs
  • 3 Carrot
  • 400 g Potatoes
  • 1 Lemon
  • 5 cloves Garlic
  • 1 tbsp Thyme
  • 3 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • ½ tsp Black pepper (optional)

Method

  1. Heat the oven to 210C (410F). Cut the potatoes and carrots into chunks.
  2. Toss the vegetables and chicken with the oil, smashed garlic, thyme, salt, pepper, and lemon zest on a tray.
  3. Roast until the chicken is golden and the vegetables tender, 35 minutes, turning once.
  4. Squeeze the roasted lemon over and serve from the tray.
