  • 300 g All-purpose flour
  • 100 g Sugar
  • 1 Cinnamon stick
  • 4 tbsp Neutral oil
  • ½ tsp Salt
  • 50 g Peanuts (optional)

Method

  1. Mix the flour with warm water and salt into a soft dough, then cover and leave in a warm place to rise until doubled, about 1 hour.
  2. Crush the peanuts and grind a little cinnamon from the stick, then mix them with the sugar to make the filling.
  3. Divide the risen dough into rounds, fill each with a spoon of the sugar mix, and pinch closed into a sealed ball.
  4. Griddle the filled pancakes in the oil over medium heat, pressing them flat with a spatula, until golden and crisp on both sides, about 10 minutes.
  5. Serve hot, taking care with the molten sugar centre.
