  • 100 g Cooking chorizo
  • 60 g Jamon serrano
  • 100 g Frozen peas
  • 1 Bell pepper
  • 300 g Canned tomatoes
  • 1 Onion
  • 3 tbsp Extra-virgin olive oil
  • ½ tsp Salt

Method

  1. Heat the oven to 200°C (400°F).
  2. While the oven heats, chop the onion and red pepper.
  3. Slice the cooking chorizo into coins.
  4. Warm the oil in a wide pan over medium heat. Soften the onion and pepper until translucent, then add the chorizo, tomato, and peas and cook down into a thick, jammy sauce.
  5. While the sofrito cooks down, slice the jamon serrano into ribbons for laying over the eggs.
  6. Tip the sofrito into a baking dish (or individual cazuelas). Make wells with the back of a spoon, crack an egg into each, and drape the sliced ham over the top.
  7. Bake until the whites are set but the yolks are still soft, about 10 minutes.
  8. Bring the dish straight to the table with bread for mopping.
