About Huevos a la Mexicana
Huevos a la Mexicana are Mexican scrambled eggs named for their patriotic palette: the white of the egg, the red of tomato, and the green of chile echo the colors of the national flag in a single skillet. It is one of the most common everyday breakfasts across Mexico, quick enough for a weekday and made from ingredients almost any kitchen keeps on hand. Onion and green chile are softened first, then diced tomato is cooked down to a soft base before the beaten eggs are folded in and cooked gently until just set.
The result is soft, fluffy, and glossy, with the fresh tomato keeping the eggs moist and the green chile providing a clean, bright heat that you can dial up or down. Cooking the vegetables down before adding the eggs concentrates their flavor and keeps the scramble from going watery. It is meant to be eaten right away, folded into warm corn tortillas as tacos or served with beans and a little salsa on the side. Fast, filling, and endlessly customizable, it is the kind of breakfast that anchors a Mexican morning.
