  • 8 Egg
  • 300 g Black beans
  • 4 Tomato
  • 1 Onion
  • 1 Jalapeno
  • 2 cloves Garlic
  • 1 tsp Ground cumin
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 3 tbsp Cilantro (optional)
  • 1 Avocado (optional)

Method

  1. Dice the onion, tomato, and jalapeño; mince the garlic.
  2. Soften the onion, garlic, and jalapeño in the oil with the cumin, then add the tomato and salt and simmer to a sauce, 8 minutes.
  3. Stir the black beans into the sauce to warm through.
  4. Make wells in the sauce and crack in the eggs; cover and cook until the whites set, 6 minutes.
  5. Scatter cilantro and avocado over and serve from the pan.
