- 8 Egg
- 300 g Black beans
- 4 Tomato
- 1 Onion
- 1 Jalapeno
- 2 cloves Garlic
- 1 tsp Ground cumin
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
- 3 tbsp Cilantro (optional)
- 1 Avocado (optional)
Method
- Dice the onion, tomato, and jalapeño; mince the garlic.
- Soften the onion, garlic, and jalapeño in the oil with the cumin, then add the tomato and salt and simmer to a sauce, 8 minutes.
- Stir the black beans into the sauce to warm through.
- Make wells in the sauce and crack in the eggs; cover and cook until the whites set, 6 minutes.
- Scatter cilantro and avocado over and serve from the pan.
