- 120 g Burrata
- 100 g Cherry tomatoes
- 10 g Basil
- 2 tbsp Extra-virgin olive oil
- 40 g Arugula (optional)
- ¼ tsp Black pepper (optional)
Method
- Take the burrata out of the fridge and leave it in its water while you cook — served fridge-cold the centre stays firm instead of running.
- Halve the tomatoes and put them cut-side down in a dry pan over a high flame. Three minutes without moving them, until the cut faces blacken and the skins loosen.
- Scatter the rocket across a plate and grind over the pepper.
- Spoon the hot tomatoes and their juices over the rocket, tear the burrata open on top so the cream runs into them, pour on the olive oil and tear the basil over at the last moment.
