- 220 g Beef sirloin
- 70 g Farro
- 100 g Cannellini beans
- 2 tsp Extra-virgin olive oil
- ½ Lemon
- 100 g Cherry tomatoes (optional)
- 40 g Arugula (optional)
- 2 g Rosemary (optional)
- ½ tsp Black pepper (optional)
Method
- Simmer the farro in salted water for twenty-eight minutes, until tender but still with a bite, then drain and leave it to steam dry.
- Take the sirloin out of the fridge and season it hard with the black pepper and salt. Strip and chop the rosemary, halve the tomatoes and rinse the beans.
- Sear the sirloin in a dry heavy pan over the highest flame, three minutes a side for rare, then move it to a board to rest.
- While the beef rests, throw the tomatoes into the hot pan with the rosemary and leave them two minutes until the skins split and blacken.
- Turn the warm farro and beans through the olive oil and lemon juice while the grain still steams, then fold in the blistered tomatoes and all the pan juices.
- Fold in the rocket, slice the rested beef thinly across the grain and lay it over with the board juices.
