Ingredients

  • 200 g Beef sirloin
  • 40 g Gorgonzola
  • 20 g Walnuts
  • 2 tbsp Extra-virgin olive oil
  • 2 tsp Red wine vinegar
  • 50 g Arugula (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Take the sirloin out of the fridge and season it hard with the black pepper and salt. A steak straight from the fridge cooks grey through the middle before the outside colours.
  2. Toast the walnuts in a dry pan for three minutes, shaking often, then tip them straight out before they darken further.
  3. Sear the sirloin in the same pan, dry and very hot, three minutes a side for rare, then move it to a board.
  4. Rest the beef five minutes. Meanwhile whisk the olive oil into the red wine vinegar until it thickens and toss the rocket through most of it.
  5. Slice the beef thinly across the grain and fan it over the leaves with the board juices, crumble the gorgonzola on top and crush the walnuts over in your fingers.
