Ingredients

  • 600 g Chicken breast
  • 150 g Spinach
  • 150 g Ricotta
  • 30 g Parmigiano-Reggiano
  • 400 g Canned tomatoes
  • 2 cloves Garlic
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 6 Basil (optional)

Method

  1. Wilt the spinach in a dry pan, squeeze dry, chop, and mix with the ricotta and grated parmesan.
  2. Butterfly the chicken breasts and pound thin; spread with the filling and roll up, securing with a pick.
  3. Warm the oil with the sliced garlic, add the tomatoes and a pinch of salt, and simmer 5 minutes.
  4. Nestle the rolls into the sauce, cover, and braise gently until the chicken is cooked through, 20 minutes.
  5. Tear the basil over and serve.
