- 600 g Chicken breast
- 150 g Spinach
- 150 g Ricotta
- 30 g Parmigiano-Reggiano
- 400 g Canned tomatoes
- 2 cloves Garlic
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
- 6 Basil (optional)
Method
- Wilt the spinach in a dry pan, squeeze dry, chop, and mix with the ricotta and grated parmesan.
- Butterfly the chicken breasts and pound thin; spread with the filling and roll up, securing with a pick.
- Warm the oil with the sliced garlic, add the tomatoes and a pinch of salt, and simmer 5 minutes.
- Nestle the rolls into the sauce, cover, and braise gently until the chicken is cooked through, 20 minutes.
- Tear the basil over and serve.
