Ingredients

  • 600 g Chicken thighs
  • 1 Egg
  • 4 tsp Soy sauce
  • ¾ tsp Five-spice powder
  • 4 tbsp Cornstarch
  • 5 tbsp Flour
  • 500 g Potatoes
  • 1000 ml Neutral oil
  • 1 Onion
  • 1 tbsp Butter
  • 2 cloves Garlic
  • 1 tbsp Curry powder
  • 350 ml Chicken stock
  • 100 ml Milk
  • 1 tsp Salt
  • 1 tbsp Olive oil (optional)
  • 1 tsp Garlic powder (optional)
  • 1 tsp Onion powder (optional)
  • 1 tsp Smoked paprika (optional)
  • ½ tsp White pepper (optional)
  • 1 Green bell pepper (optional)
  • 1 Chili (optional)
  • 2 Scallions (optional)
  • 1 tsp Ground turmeric (optional)
  • 1 tsp Sugar (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Cut the chicken thighs into bite-sized pieces.
  2. Mix the chicken with the egg, the soy sauce, olive oil, garlic powder, onion powder, smoked paprika, the five-spice, the white pepper and the salt. Let it sit at least 20 minutes (up to 2 hours in the fridge is better).
  3. Finely chop the small onion and mince the garlic for the sauce.
  4. Melt the butter in a saucepan and cook the onion for 3-4 minutes until soft, then add the garlic for 30 seconds.
  5. Stir in the curry powder and turmeric and cook for 30 seconds until fragrant.
  6. Add the flour and stir for 1 minute to make a roux.
  7. Gradually whisk in the chicken stock until smooth, then stir in the milk, the soy sauce, the sugar and the black pepper.
  8. Simmer for 5-8 minutes, stirring now and then, until it coats the back of a spoon. Season with a pinch of salt and keep warm.
  9. Cut the potatoes into chips about a finger thick.
  10. Heat the oil in a deep, heavy pan to 160C (320F).
  11. Slice the green pepper and large onion into strips, finely chop the chili and slice the scallions. Set aside for the toss.
  12. Fry the chips in the hot oil for 5-6 minutes until cooked through and pale gold. Lift onto a rack.
  13. While the chips fry, toss the marinated chicken with the cornstarch and the remaining flour until every piece is craggy and coated.
  14. Bring the oil up to 180C (350F). Fry the chicken in batches for 6-7 minutes until deep golden and crisp. Drain on the rack.
  15. Pour off all but a tablespoon of oil from a wok or wide pan. Stir-fry the pepper, onion and chili over high heat for 2 minutes until just softened.
  16. Add the fried chicken and chips, the scallions, the remaining five-spice and a pinch of salt. Toss over the heat for 1 minute so everything is coated.
  17. Tip the spice bag onto plates and serve with the warm curry sauce poured over or in a bowl for dipping.
