  • 200 g Pasta
  • 60 g Butter
  • 2 tbsp Soy sauce
  • 3 cloves Garlic
  • ½ tsp Black pepper
  • 1 tbsp Salt
  • 150 g Mushroom (optional)
  • 2 Scallions (optional)
  • 1 sheet Nori sheets (optional)

Method

  1. Bring a large pot of water to a boil and salt it heavily.
  2. Drop in the pasta and cook one minute shy of al dente.
  3. While the pasta cooks, mince the garlic. If using, slice the mushrooms.
  4. Melt some of the butter in a wide pan over medium. Add the garlic, and the mushrooms if using, and cook until softened, about 4 minutes.
  5. Reserve a mugful of pasta water, then drain.
  6. Add the drained pasta to the pan with the rest of the butter and the soy. Toss vigorously with a splash of pasta water until glossy.
  7. Plate, crack over the black pepper, and scatter the scallions and torn nori on top.
