  • 400 g Jasmine rice
  • 200 g Shrimp
  • 2 Egg
  • 50 g Cashews
  • 3 Scallions
  • 2 tbsp Fish sauce
  • 2 tbsp Neutral oil
  • ½ Pineapple
  • 1 Lime (optional)

Method

  1. Beat the eggs in a bowl, thinly slice the scallions, and toast the cashews in a dry wok until golden, then tip them out.
  2. Heat the oil in the wok over high heat and scramble the eggs into soft curds, then push to one side.
  3. Add the shrimp to the wok and stir-fry over high heat until pink and just cooked through.
  4. Add the rice and cubed pineapple and toss over high heat until heated through and lightly toasted, seasoning with the fish sauce.
  5. Turn off the heat and fold in the toasted cashews and scallions.
  6. Serve with a lime wedge on the side.
