Ingredients

  • 400 g Kimchi
  • 300 g Pork belly
  • 300 g Firm tofu
  • 1 tbsp Gochugaru
  • 1 tbsp Gochujang
  • 3 cloves Garlic
  • ½ tsp Salt
  • 3 Scallions (optional)
  • 1 tbsp Toasted sesame oil (optional)

Method

  1. Slice the pork belly, roughly chop the aged kimchi, and mince the garlic.
  2. Render the pork in the sesame oil in a pot over medium heat, then add the kimchi and fry until deep red.
  3. Add water, the gochugaru, gochujang, garlic, and salt and simmer for 15 minutes.
  4. While the stew simmers, cube the tofu and thinly slice the scallions.
  5. Slip in the tofu and warm through gently.
  6. Scatter the scallions and serve bubbling with rice.
