- 200 g Konjac noodles (shirataki)
- 80 g Pork belly
- 100 g Kimchi
- 1 tsp Toasted sesame oil
- 1 Scallions (optional)
- 2 cloves Garlic (optional)
- 1 tsp Light soy sauce (optional)
- 1 tsp Sesame seeds (optional)
Method
- Cut the pork belly into short thick batons, squeeze the kimchi over a bowl and keep the juice, then chop it. Slice the scallion and crush the garlic.
- Drain the konjac noodles, rinse them under a hard cold tap, then dry-fry them in a bare pan until the water has gone and they squeak against the metal.
- Lay the pork belly in a cold wok and bring it up over medium heat until the fat runs clear and the edges are lacquered brown.
- Add the garlic and kimchi to the rendered fat and fry hard until the kimchi darkens and stops smelling raw.
- Tip in the dried konjac noodles with the reserved kimchi juice and the soy and toss over high heat until the pan is dry again and the strands are stained red.
- Kill the heat, trickle the sesame oil over, and turn it twice before it hits the bowl. Scatter the scallion and sesame seeds.
