About Kimchi Mandu
Kimchi mandu are Korean dumplings filled with the punchy combination of kimchi, ground pork, and crumbled tofu, bound with sesame oil, garlic, and scallion. Mandu are a fixture of Korean cooking, eaten as snacks, appetizers, and especially around Lunar New Year, and this kimchi-forward version delivers a tangy, savory, faintly spicy bite. The tofu lightens the filling and keeps it tender, while the pork adds richness and the kimchi brings its signature fermented sourness. Folded into wrappers and cooked, they offer the satisfying contrast of a chewy skin around a juicy interior.
These are made as potstickers: pan-fried until the bottoms turn golden and crisp, then finished with a splash of water and a lid so the steam cooks the filling through and softens the tops, giving you crunch and tenderness in one dumpling. Squeezing the kimchi and tofu dry before mixing is what keeps the filling from turning watery and the wrappers from tearing. A simple soy-based dipping sauce is the classic accompaniment, brightening each bite. Making a batch of six servings is well suited to a group, and the dumplings freeze beautifully raw, so it is worth folding extra to cook straight from frozen another day.
