- 1 Low-carb tortillas
- 180 g Ground lamb
- 1 tsp Aleppo pepper
- ½ tsp Ground cumin
- 1 tbsp Tahini
- ¼ Lemon
- ¼ tsp Salt
- 12 g Parsley (optional)
Method
- Work the minced lamb with the chopped parsley, the Aleppo pepper, the cumin and the salt, squeezing it through your fingers until it turns tacky and holds together as one mass.
- Loosen the tahini with the juice of the lemon quarter and a spoonful of cold water, stirring past the point where it seizes and goes pale until it runs off the spoon again.
- Fold the low-carb tortilla in half and open it like a book, press the lamb into one side in a layer no thicker than a pencil, right out to the edges, and close the other half over it.
- Lay the parcel in a dry heavy pan over medium-low heat with something weighty on top and give it five to six minutes a side, until the outside is deeply toasted and fat has begun to bead through the surface. Go slowly here — a fierce pan browns the bread long before the lamb inside is done.
- Lift the parcel onto a board and leave it two minutes before you cut it, so the fat inside settles instead of running out at the first slice.
- Cut the parcel into four fingers and serve them with the tahini alongside for dipping, while the edges are still crisp.
