Ingredients

  • 200 g Konjac rice
  • 180 g Ground lamb
  • 1 tbsp Tahini
  • 1 tbsp Olive oil
  • 1½ tsp Ground cumin
  • 1 tsp Sumac (optional)
  • 30 g Tomato (optional)
  • 10 g Parsley (optional)
  • ¼ Lemon (optional)

Method

  1. Work the cumin, salt and half the chopped parsley into the lamb with your hands until it turns slightly sticky, then shape it into four short fingers.
  2. Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
  3. Loosen the tahini with cold water a spoonful at a time until it turns pale and pourable, and sharpen it with the lemon. Dice the tomato.
  4. Heat the olive oil in a heavy pan over medium-high and cook the kofta for 8 minutes, turning them so all sides brown and the fat renders out into the pan.
  5. Spread the konjac rice on a plate and set the kofta over it, pouring on the spiced fat from the pan. Spoon the tahini across, scatter the tomato, sumac and the rest of the parsley.
