  • 1 tsp Ground cumin
  • 1 tsp Ras el hanout
  • 400 g Canned tomatoes
  • 1 Onion
  • 3 cloves Garlic
  • 4 Egg
  • 3 tbsp Cilantro
  • 3 tbsp Extra-virgin olive oil
  • 1 tsp Salt

Method

  1. Mix the beef with the cumin, half the ras el hanout, and salt, then roll into small meatballs.
  2. Soften the chopped onion and garlic in the oil over medium heat, then add the tomatoes and remaining ras el hanout and simmer into a sauce, about 8 minutes.
  3. Nestle the meatballs into the sauce and simmer until cooked through, about 12 minutes.
  4. Make wells in the sauce, crack an egg into each, cover, and cook until the whites are set, about 6 minutes.
  5. Scatter the cilantro over the top and serve with bread.
