- 200 g Zucchini
- 80 g Tomato
- 30 ml Olive oil
- 10 g Dill
- 0.1 tsp Salt
- 30 g Feta (optional)
- ¼ tsp Black pepper (optional)
Method
- Cut the courgettes into thick half-moons and grate the tomato down to its skin, which you throw away.
- Warm the olive oil in a wide pan on the lowest heat and turn the courgettes over in it until every face is slick and none has coloured.
- Pour the grated tomato over, add the salt and a splash of water, and shake the pan level.
- Cover and braise without stirring once until the courgettes give under a spoon and a green-gold oil has pooled at the rim of the pan.
- Take the lid off and leave the pan alone until it is only just warm, which is when this dish finally tastes of something.
- While it settles, chop the dill roughly and break the feta into rubble.
- Scatter the dill over the pan, grind the pepper across, crumble the feta on and spoon the separated oil back over everything.
