Ingredients

  • 200 g Konjac noodles (shirataki)
  • 140 g Pork belly
  • 90 g Kimchi
  • 2 tsp Toasted sesame oil
  • 1 tsp Gochugaru (optional)
  • 1 tsp Light soy sauce (optional)
  • 20 g Scallions (optional)
  • 5 g Sesame seeds (optional)

Method

  1. Cut the pork belly into short thick batons. Squeeze the kimchi out over a bowl, keeping the juice, and chop it roughly. Slice the spring onions thin.
  2. Drain the konjac noodles, rinse them hard under a cold tap to take off the brine smell, then dry-fry them in a bare pan for four minutes until they squeak and stop weeping water.
  3. Lay the pork into a cold wok and bring it up over a medium flame for six minutes, until the fat has run out and the edges have gone brown and stiff.
  4. Add the kimchi and the gochugaru to the rendered fat and fry hard for three minutes, until the kimchi darkens and starts to catch on the base.
  5. Tip in the dried konjac with the reserved kimchi juice and the soy, and toss over a high flame until every strand is stained red and the pan is dry again.
  6. Off the heat, trickle over the sesame oil and turn it twice, then scatter the spring onion and sesame seeds.
