Ingredients

  • 200 g Konjac noodles (shirataki)
  • 150 g Pork belly
  • 90 g Bok choy
  • ½ tsp Sichuan peppercorn
  • 1 Chili
  • 2 tsp Toasted sesame oil
  • 8 g Ginger (optional)
  • 1 tsp Light soy sauce (optional)
  • 8 g Cilantro (optional)

Method

  1. Cut the pork belly into short thick batons, split the pak choi, ring the chilli and grate the ginger.
  2. Lay the pork into a cold pan and bring it up over a medium flame for eight minutes. Starting cold lets the fat run out before the outside seizes, which is what makes the edges crisp rather than tough.
  3. Add the pak choi, ginger and chilli to the rendered fat and turn them for two minutes until the stems slump.
  4. In a second bare pan, toast the sichuan peppercorns until fragrant and crush them, then drain, rinse and dry-fry the konjac noodles for four minutes until they squeak and the pan goes dry.
  5. Tip the dried noodles into the pork pan off the heat with the sesame oil and soy, turn twice so they take up the fat, and finish with the crushed pepper and the coriander.
