- 200 g Konjac noodles (shirataki)
- 140 g Pork belly
- 1 Egg
- 1 tbsp Toasted sesame oil
- 8 g Ginger
- 80 g Spinach (optional)
- 1 tsp Light soy sauce (optional)
- ¼ tsp White pepper (optional)
Method
- Cut the pork belly into short thick batons and grate the ginger over them.
- Lower the egg into boiling water for six and a half minutes, then cool it under a running tap and peel it. The yolk should still be liquid at the centre — it becomes the sauce once it is broken.
- Lay the pork into a cold pan and bring it up over a medium flame for eight minutes. Starting cold lets the fat run out before the outside seizes, which is what makes the edges crisp rather than leathery.
- Add the spinach and white pepper to the rendered fat and turn until the leaves collapse, about a minute.
- In a second bare pan, drain and rinse the konjac noodles then dry-fry them four minutes until they squeak and the pan goes dry.
- Tip the noodles into the pork pan off the heat with the sesame oil and soy, turn twice so they take up the fat, then halve the egg over the top and let the yolk run through.
