Ingredients

  • 200 g Konjac noodles (shirataki)
  • 170 g Salmon fillet
  • 100 g Spinach
  • 1 tbsp Toasted sesame oil
  • 10 g Ginger (optional)
  • 2 tsp Japanese soy sauce (koikuchi shoyu) (optional)
  • 5 g Sesame seeds (optional)
  • 15 g Scallions (optional)

Method

  1. Pat the salmon dry, grate the ginger over it and slice the spring onions thin.
  2. Roast the salmon at 200°C (400°F) for eleven minutes, until the flesh has gone matt and parts under gentle pressure.
  3. Drain the konjac noodles and rinse them hard under a cold tap to take the brine smell off, then dry-fry them in a bare pan for four minutes until they squeak and stop giving up water.
  4. Add the sesame oil and the spinach to the dried noodles and turn them until the leaves collapse, about a minute, then take the pan off the heat and season with the soy.
  5. Break the salmon into big flakes over the noodles, keeping some pieces whole, and finish with the spring onion and sesame seeds.
