- 200 g Konjac noodles (shirataki)
- 180 g Salmon fillet
- 100 g Spinach
- 2 tsp Chili oil
- 10 g Ginger
- 1 tsp Japanese soy sauce (koikuchi shoyu) (optional)
- 5 g Sesame seeds (optional)
Method
- Pat the salmon dry and grate the ginger over it.
- Roast the salmon at 200°C (400°F) for twelve minutes, until the flesh has gone matt and parts under gentle pressure.
- Drain and rinse the konjac noodles hard under a cold tap to take the brine smell off, then dry-fry them four minutes in a bare pan until they squeak.
- Add the chilli oil and the spinach to the dried noodles and turn until the leaves collapse, about a minute, then season with the soy off the heat.
- Break the salmon into big flakes over the noodles, keeping some pieces whole, and scatter the sesame seeds.
